Mexican Appetizer Recipe
When choosing an appetizer many things should be considered. Like the preferred taste of the food as many would like to eat spicy but others hate it. As well as if it compliments the flavor of your next main dish like peanut flavored appetizer would be good to a steak dish later on. But nevertheless it would be good to adopt the nationality of your guests. They would be more than happy to pick foods that would make them feel like home.
In this article I will tell how to make a Mexican Chicken Satay.
Ingredients
I pound chicken breast fillet cut into 2cm cubes
125ml distilled water
1 liter of cold mineral water
2 tablespoon smooth peanut butter
1 tablespoon honey
1 tablespoon light soy sauce
2 tablespoons lemon juice
1 teaspoon grated fresh ginger
1 finely chopped onion
1 teaspoon sambal oelek
Tabasco sauce

In a mixing bowl combine distilled water, peanut butter, honey, light soy sauce, lemon juice, grated fresh ginger, and chopped onion. Stir in sambal oelek and mix well until you see fine blending. Add the chicken cubes, cover it and marinate for at least 3 hours or preferably overnight.

Soak cocktail sticks for 1 hour in the cold mineral water then drain it. Remover cover and chicken from marinade. Thread two pieces of chicken on each cocktail stick and set aside. Pour marinade into saucepan, bring to the boiling point, lower the heat and simmer for at least 10 minutes., or until the sauce is reduced and thickened.

Cook chicken for about 20minutes under moderate grill or over hot coals, until tender. Serve four satay sticks per person, offering dipping sauce separately. You will approximately need about 36 good-quality wooden cocktail sticks for this Mexican appetizer recipe. The enjoy eating while mingling with the crowd.
